My Keto Diet Updates : Week 3
3 weeks. The halfway mark on my self-imposed low carb challenge. Here’s how the keto diet has been treating me so far!
I kick-started the day with a low carb Peanut Butter smoothie. I already mentioned that the Coffee Power Smoothie is my favourite, and the Peanut Butter one is a close second.
Lunch was an utterly divine Spinach & Cheese-stuffed Chicken in Mushroom Ragu. This one made it to my Top 3 Grow Fit meals! So goddamn delicious, I genuinely scraped the container clean (which I haven’t done with any of the other meals so far). Can’t wait for the next time this one’s on the menu!
Dinner was an Ultra Low Carb Chicken & Cheese Quesadilla. Delicious as it was, it was a tad dry, so I glazed it with some butter. After that, it was perfect!
This day fell on the 1st of November, which is Kannada Rajyotsava, so the Grow Fit kitchens were closed. So once again, I had to figure both homemade and eating-out options to stay on my low carb diet.
Thankfully, my breakfast smoothie was delivered with the previous night’s dinner, so I was sorted to start my day. This one was almond-flavoured, and managed to fill me up… for a while.
I don’t know whether it was the fact that J was home too (and I had to watch him eat breakfast), but I got hungry halfway through the morning, which I usually don’t. So I ended up boiling a couple of eggs and eating those with Himalayan Pink Salt and some red chilli powder.
Lunch was a cheese omelette (I know, I know, AGAIN!), and a couple of chicken kebabs. I really need to figure out more easy keto recipes I can make at home.
Dinner was out with friends, at 612 East. Luckily I had browsed the menu beforehand on Zomato, so ordering was a lot easier once I got there. I ordered the Oak Wood Smoked Spicy Sambal Fish, which was delicious! I’ve been a huge fan of sambal ever since my trip to Bali, and loved how it flavoured the fish. I swapped out the lemon-parsley potatoes for grilled veggies, so my meal got even healthier!
Since there were no food deliveries the previous day, I didn’t have a smoothie to start my day with. Instead, breakfast was black coffee and cheesy scrambled eggs. This felt more filling than my usual smoothie mornings, so I wasn’t hungry for a while.
Lunch was Chicken Satay with a peanut dip. If you remember, this was also my very first meal from Grow Fit, so awww, nostalgia.
I realise I haven’t been talking much about the snacks I receive each day, so I thought I’d mention those today. This day, I got ghee-roasted almonds, which are really tasty! They were dusted with some peri-peri spice, which made them all the better to much in the late afternoon, with a cup of coffee.
Dinner was an Ultra Low Carb Tandoori Chicken Wrap. Besides the chicken, the wrap was also full of fried onions, bell peppers, and cabbage. It tasted alright. Wasn’t one of their best, but wasn’t bad either.
Day 18 started off with a Guava smoothie, which was a very interesting flavour! Fresh and fruity, but still creamy.
Lunch was Chicken Uttapam (!) with an MCT-enhanced tomato chutney. And I must say, this was incredibly delicious! It was a nice change from the rotis, and the flavour was just right.
Dinner was Ultra Low Carb rotis with Methi (fenugreek) Chicken. The rotis were super-soft and glazed with ghee, which made them really yummy. The chicken curry was great. Flavour-wise, not very different from one you would order at a restaurant, but I tasted more ghee in this one. (Or could have been butter, I can’t say for certain.)
This was a pretty busy Saturday, and a long one (so many things to do, so many places to be!)
Thankfully the Orange-flavoured Power Smoothie gave me a solid start. I was a little skeptical of how well orange would work as a flavour in a smoothie, but it wasn’t bad at all.
Lunch was, unfortunately, a rushed affair. I had to scarf down my Ultra Low Carb Kheema & Cheese Paratha before I ran out to get on with my day.
That evening also included a quick Bangalore tweetup. And lucky for me, Third Wave Coffee Roasters offers a keto-friendly almond milk latte!
The dinner menu got me excited. An Ultra Low Carb (ULC) Chicken Burger?! Was Grow Fit actually feeding me not just pizza and lasagna on a keto diet, but burgers, too?! I waited eagerly for that dinner delivery.
Sadly, I was disappointed. Their signature ULC flour did not work too well as a burger bun, and the texture was just not very pleasant. I ended up ditching the buns, and eating only the patty and cheese.
I later ended up attending a friend’s house party, where I dutifully sat sipping only on my electrolyte Power Drink, and nibbling on some paneer.
Waking up super late on a lazy Sunday, I started my day with the Coffee Power Smoothie (yay!).
Lunch was Chicken Tikka Pizza, which as you remember, is out of this world! This time too, it did not disappoint.
Dinner was a very interesting Tom Kha Kai, a coconut-milk soup with chicken, mushrooms, spinach, and a whole lot more. It was my first time ever trying this dish, and it was delicious! I’m a big fan of the flavour of coconut milk, so this worked very well for me. It was filling without being heavy, which is great for dinner. I’m going to hunt down the recipe for this one!

I started the day with a Thandai Power Smoothie, which you might remember from my previous update. Very refreshing!
Lunch was a vision of chicken goodness. The Greek Yoghurt-marinated Grilled Chicken Steak was gorgeous, both to look at and to eat. The flavours were very Indian, and the pan-fried salad made a great accompaniment.
Dinner was Cauli-fried rice with chicken. Unfortunately, this was a bit of a letdown, too. The rice was very bland, and I doused it in tabasco sauce before I could eat it. Even then, I struggled to finish the meal. More spice and flavours would have made a huge difference!
They also added a new little something. All dinners are now accompanied by a probiotic curd, to help ease any digestive discomfort one may have from following a keto diet. I personally haven’t suffered any such discomfort, but hey, probiotics are good, so Imma eat it anyway!
And there you have it. Three weeks down, and still going strong! I’m going to find myself some more keto recipes I can make at home, though. Can’t eat cheese omelettes all the time! (Do you have any recipes you could share? If yes, leave me a comment below. I’d be very grateful!)
As for how I’m feeling, I’m feeling great! My energy levels are fantastic, I’m sleeping very soundly each night, and I find myself able to focus better on tasks at hand. Oh, and I recently got a physical assessment done, and I’m down over a kilogram in body fat, and up more than a kilo in muscle mass. Total kilo weight loss of 3.5 kilos! Pretty great for 3 weeks, eh?
